Stewed Apple Overnight Oats

Start your morning with a satisfying bowl of apple cinnamon overnight oats, made for easy breakfasts and grab-and-go convenience. Stewed apples, warming cinnamon and wholesome ingredients come together with Australian Nutrition Primal Iron Beef Spleen Powder in this refined sugar-free recipe that can be prepared the night before and enjoyed straight from the fridge.

Ingredients for the oats:
- 3 tbsp rolled organic oats
- 1 tbsp chia seeds
- 1 tbsp flax meal
- 4 capsules of Primal Iron Beef Spleen Powder
- 1 tbsp collagen or protein of choice (optional)
- 1.5 tsp organic ground cinnamon
- 1.5 tsp of vanilla extract
- 1.5 tbsp organic Greek yoghurt
- 1/4 cup milk of choice
To top: Chopped walnuts, extra yoghurt and pepitas
Ingredients for the stewed apples:
- 1 pink lady apple, sliced into rough cubes
- 1.5 tsp organic ground cinnamon
- Splash of maple syrup (optional)
- 1 tbsp water
Method:
- To your jar or small bowl of choice, add all the ingredients for the overnight oats (open the capsules and add powder to this). Mix well to combine, cover and set in the fridge for a minimum of 1 hour to thicken (setting overnight is best).
- While the overnight oats are setting, make the stewed apples. In a small saucepan over medium heat, add all the stewed apple ingredients. Stir and cook until the apples are soft and have absorbed all the flavour. Transfer to a bowl, and set aside to cool (this creates the prebiotic effect!).
- Assemble once everything is ready. Add extra yoghurt, the stewed apples and then the chopped walnuts and pepitas on top of the overnight oats. Dig in and enjoy!
Notes: The overnight oats and stewed apples last well in an airtight container for up to a week in the fridge.
